I started making this kit to see if I could????!!!
I have the right bottles and the caps and wires are on the way, but in the instructions they speak of "artificially carbonating the wine"
I found no info about this on the WE site, can anyone tell me what this is or how it is done?

Or should I simple go the other route and skip the Kmet and Sorbate, and put up with a bit of yeast in the bottom of the bottle! (argh)
 
They mean by force carbonating used compressed C02 like you would to keg beer. Ive done both and can say that doing it naturally has a better result but the ease of force carbonating an kegging easily makes up for that little bit better carbonation. Force carbonating usually produces bubbles that are a tiny bit bigger resulting in a slightly different feeling of carbonation.
