Making a dry red with high %abv

Hi all.


Another question for the experts! If I wanted to make a medium dry red out of grape juice, and wanted around 14-15%abv, how do I achieve that?


I thought that the amount of sugar you put into your wine raises the abv as the yeast has more food to eat on? Is it just a case of adding more yeast, or nutrient, energiser, or all three?

You'll need to start with and SG of between 1110 & 1115 to get 15%. Below is a table to help you. Keep in mind that sometimes with a fruit wine the high alcohol levels will hide the fruit flavors in you wine. You should not need anything extra except sugar.

Yeh, I have a copy of that table in C J J Berry's book. However, If I start off with an SG of 1110 by adding sugar, surely it will be very sweet, not dry?

The yeast should, depending on the type used should happily munch away. A good choice of yeast would be a champagne yeast, the ones we find on this side of the pond have an alcohol tolerance of 18%. Again be careful or you could end up with it tasting like jet fuel.

Ah yes, I've heard some good stories about my dad brewing 21% elderberry wine before. My advice to him would have been to open up a little distillery there, but oh well.


I've never tried champagne yeast. I'll see what they've got in the homebrew store tomorrow. What do you think of this recipe below, and would you advise different amounts or add something or take something out:


to make1 gallon:


-2 ltrs red grape juice
-water to make syrup to fill carboy (not too full, of course). sugar to raise s.g. to 1.110
-1 tsp acid blend
-1 tsp pectolase
-1 tsp nutrient
-yeast

The recipe looks good. While you are in the home brew store have them show you how to use the hydrometer and let the know your recipe because they will be able to recommend a yeast with the alcohol tolerance you need. Also consider using a bit of oak, again the folks at the store will be able to guide you.

Yes, I've been intruiged by adding someoak. How does that improve the flavour? Is that primarilywhat gives commercial wines that tangy bite, or is that acid blend?

Depending on the toast level of the oak it can add anything from coconut to smoke flavors to the wine. Look under oak and aging in this forum and you will find many threads to read. For me oak adds depth, complexity and character to the wine, other folks mileage may vary

Good idea and something else to ask the folks at the wine shop - they'll know the best brands to use and what ingredients you need to watch for.

Use 1 tsp of nutrient per gallon and 1/2 tsp of energizer per gallon of must. Go with Red Star Premier Cuvee or Lalvin EC-1118 or best of all Lalvin 71B-1112 as thats a good 1 for fruit concentrates. Champayne yeast may quit on you leaving it sweeter then you would want as the abv tolerance is only good up to 13-15%. thee #'s are estimates and can go a little beyond that but can also die off at 12.5% lavin your wine sweet.

Problem is most of the time they dont know what they are talking about in these shops. I have 2 local places and 1 of the places knows absolutely nothing about fermenting but sells most of the stuff and can order the rest and the other has quite an inventory of wine and beer making stuff but really only knows stuff about beer but they are well experienced in that area and very well known world wide about beer making and have written many books like Clone Brews and Beer captured and working on a 3rd book. Sadly only 1 person in the store has any knowlegd of wine making and makes some extremely good meads and will be writing a book on meads.

True we have the same problem at our local store, except they tend to get glassy eyes when I talk mead. I know that they may have different yeasts and food products and packaging laws in England so just maybe they can help.
A possible new book on meads - very cool! I love Ken's book, its well worn and when it starts to fall apart I'll be picking up a new one.

Ah, last time I visited, the shopkeepersweren't there - they were in Spain, and the lady who served me knew absolutely nothing.
If I remember correctly, they do sell Red Star Cuvee, but not so sure about the Lavin yeasts. I'll let you know what I found later!

I was wrong - they didn't sell Red Star Cuvee. However, I just bought plain wine yeast with a high alcohol tolerance level.


I also bought my first hydrometer (actuallybought 2 because of the advice) which I can see why it's a winemakers best friend.


Made a batch of that red grape, and took VC's advice and have added some French Oak chips and here she is...

I also took you guys advice and not too have a high S.G. The s.g. read at 1.100 and all is looking good!


The homebrew store also doesn't sell acid blend - they haven't sold it for over 20 years because noone was buying the stuff! Shocking...

Ah yes - that's right. I did use lemon juice for my apricot. I don't know if I should use it in this though, any advice anyone please?
