Based on something I read I froze the loquats immediately after harvesting in individual bags and then thawed them and seeded them right before placing in my primary with pectic enzyme and campden. Having tried to peel them or seed them previously without freezing them, this method seemed to produce more juice and make the process go much faster. Just a thought.
Also the seeds while poisonous can be dried separately, soaked in a grain alcohol with a vanilla bean and some citrus peel to make a very nice amaretto flavored liquor. If you notice they have a very nice nature amaretto scent.
I am hoping to try and make my current batch (still in primary) into champagne but we will see how that goes....
