I have a batch of cherry and a batch of raspberry going. With the kits the instructions indicate putting a dose of K meta in if you plan to have the bottles more than 6 months or a year. There appears to be no similar instructions on the fruit base instructions. I have added the campden tablets, is this enough? I am making the batches in the three gallon versions. Any help would be great.

The 1/4 tsp of K-meta added to kit wines is in addition to the amount supplied with the kit. This is added for extendedaging since the sulfite level slowlyreduces over time and therefore the protection for the wine decreases. The amount of sulfite needed to protect your wine properly is directly related to the wine's pH. The lower the pH = less sulfite needed

You can roughly calculate the amount of sulfite in your fruit wine based on thetype and number of campden tablets added.
