I am moving along on my WE Viognier kit and from the taste I had from the wine thief about a week ago it is going to be great. This is the first kit I have made that the directions want me to do a second racking to a carboy ( I am up to two now) before bottling. I assume that racking should leave the sediment behind, the directions do not say either way, they just say rack. So far I have left the sediment behind but can rack them if I need to. Please advise
BTW, I am also enjoying a glass of my pinot grigio that has been in the bottle a couple of months now. AWSOME My husband, who says wine tastes like battery acid, even liked it.

Seeing as how they want you to rack like that it is because they want
you to leave the sediment behind. Do you have a Chitosan and Kiesol ( 2
part liquid) pack with that kit as those work best without all the
sediment?
 
Thats what I thought. I added the Chitson as directed 8 days ago. This step was to " brilliantly polish" the wine, so far I have left sediment behind.
