I picked up a Red Zin, Regina by Lamanuzzi & Pantaleo, 5.3 gal (20 L). Fermentation was well under way. SG @ 1.01. I just put it the carboy with some oak. According to the bucket brix was 22, SO2 100, and TA .5

Has anyone tried these juicebuckets? Anything else to do?

All sugestions welcome. There is still Shiraz and more Zin available @$60/bucket.

Thanks will do. I calculate that to about 3 grams or about 1 tsp of acid blend. Does that seem right?

If I remember correctly it is 1 gram per liter to raise the ta .1 I would start with 15 grams of tartaric acid..... Then test in a week or two again.....

Well it it is very slow. Seems stuck @ 1.004 for 5 days now. I have added 3 tsp of nutrient, 1 tsp every 3rd day.

I did add ec-1118 on 1/1

I skipped the acid addition.
