I've made a few of the Island Mist kits. I ussually rack the wine back into the fermenting bucket for bottling, as the spigot makes it easy to fill the bottles. My question is could you make the kit w/o using the carboy? Just leave it in the fermenting bucket for the whole process? My thought is you could draw a sample to check if it is clear...why else do you want it in the carboy?

voz63, the carboy minimizes the head space exposure to air during secondary fermentation when the C02 cap is not so abundant.
 
And also after the fermentation is complete and the wine is clearing. Without a carboy the wine would be exposed to the air and be ruined.
 
After the fermentation is complete and you opened it, it would be at
extreme rism. RJS kits go 14 days in primary but then are are
transferred to carboy for clearing. I guess another 14 days for
clearing could be done but at the expense of a $20 carboy versus a $50
kit doesnt justify it.
