Hi there,
Its almost time to bottle my 28 day kit our very first kit! It's econo wine as I like to call it, (Costco's vino europa merlot, and cabernet sauignon). I'm not expecting much from it other then a wine that will merely fill the void until better wine finishes. That said I don't want to ruin it, in the instructions I am almost at the point where I degas and add kieselsol and chitosan and staibilizer. Then I filter into another carboy after it sits for 7-10 more days? Then I bottle after another 24 hours? Why do I have to do that? I have extra carboys but how does anyone who buys a normal wine kit do that? (ie they only own one carboy)
