I made several gallons this year and found mead good for enhancing other wines such as apple, plum and even grape. However, there is about 5 gallons left, good flavor, but I don't care for the rich and somewhat strong honey flavor. Any recommendations??

Make them into melomels or metheglyns! (add fruit or spices).

I've done a Raspberry Mel, Blackberry Mel, Lilac Meth, Orange Vanilla Meth/Mel. They're all good, and none taste overly-honeyish. I made them so the flavourings were the focal point.

Give it a go!
 
I have three different types bottle aging right now. In one gallon I added around a pound of crushed raspberries and it is pretty good after 3 months in the bottle. I can't wait until it gets some more age and mellows out. I would say use them to experiment with and next year make a big batch of whichever was your favorite. That's what my plan is right now. Still have to taste my peach and blackberry meads, but I'm pretty sure I'm going to like them!
 
I have a gallon that I put a stick of cinnamon, a couple things if all spice and a star anise in and I like it. It was pretty strong right away, but has definitely mellowed some in a couple weeks. I've also heard different kinds of mint work well. I'm going to give one of those a shot next year when I plant some more.
 
also, for the fruit I just crushed the fruit in a sanitized vowel and ran it through a stainer. I didn't add the pulp or anything. I didn't reLly want to have to deal with clearing all that sediment out.
 
I like the pie spices: cinnamon, clove, nutmeg, maybe a bit of anise?

Also, you could try a tea/herbal tea infusion. Perhaps something like a peach ginger, or a white tea with citrus?
