Having just read on neighbouring thread about rain effecting harvest, are there any other basics I should know? How thorough do i have to be about removing dried up or gone over grapes ? I mean is a missed mouldy grape going to spoil the lot? And how much stalk is ok to leave on?
 
While you are picking the grapes you clip the whole cluster off the vine, so the overall cluster should be in good shape and not have a lot of bad grapes in it. If there are a lot, throw it away. If only a few bad grapes, just pick them off the cluster. One or two will not make the wine bad, but too many diseased ones can impart bad flavors to the grapes.

If you have access to one, run the grapes through a crusher destemmer after picking. That will remove the bulk of the stems for you. A few pieces here and there don't hurt.
