So my 2022 FWK Cabernet, Sonoma and Meritage wines have been aging for 10-11 months and thought I would bottle them today. Tested the ph level again.
The Cabernet and Meritage is both coming in at PH 3.81. Is this pretty normal for them? Just wondering if it is low enough to store for a few years if it lasts that long. I normal try to get the the ph around 3.6.
The Sonoma was fine. It came in at ph 3.66.
