I recenly, 10 days ago, transferred my first wine made from fresh grapes off of the gross lees, i added 3/8 tsp per 7.5 gallons at this time. PH 3.26 taken after pressing.

All looked good, but today i noticed small irregular shaped flakes floating on top of the carboys. I limited the airspace as much as possible, but im using a fermoster (wide mouth) but also present in my standard 3 gal carboy.

Last night the basement window was open and a temp reading was 55F.

I attached a picture to help.

Bacteria? Tartrate? Any advice or guidance on how to proceed?

Would really hate to lose 18 gallons...

Thanks

That's tartrate crystals, I have seen them float just like that before, no worries, just keep head space to a minimum as normal.

Stickman, thank you for your reply, i cannot thank you enough. you set my mind at ease. I was hoping that was the case.

Will they continue to form until the acids stabilize, eventually settling to the bottom?

i added a picture from my 3 gal carboy.

Wanted to add a few notes for posterity.
24 hours after crush and k meta addition.
Initial TA 1.05%
Initial PH 3.14

Added k carbonate until PH came into range (3.62) and TA was measured at 0.7%. Total 2 Tbl k carbonate used in ~25 gallons of must

Abv post ferment ~13%
PH post ferment 3.26
