First batch if wine. Should I be doing anything else?

I started a gallon batch of strawberry wine using Jack Kellers recipe for frozen strawberries. I did however use 5 lbs instead of 3. I fermented down to .990 and racked to secondary 1 week ago.I had some left over so I put it in an empty wine bottle. Hope this was ok. I have not added any campden or pectic enzyme or anything of that nature. The recipe didn't call for it. Just want to make sure that is ok. There is a lot of sediment already on the bottom. When should I rack again and when I do should I top off with the extra I have? Thanks for any help. NickImageUploadedByWine Making1390750111.182068.jpg
 
I rack when ever i see 1/2 inch of sediment..i top off after every racking.
the next time you rack, i would add 1 campden tablet crushed and mixed with a little wine, add, and stir well
 
Ok will rack today then with some campden. If I top off with the wine from the bottle will I need to transfer that wine to something smaller?
