Hubby has agreed to let the wine age this time... ; ) Not sure how long that will last but on the K-meta and Sorbate is there a certain way to do it? Like when, how much? and is there anything else I need to do before bulk aging?
 
k-meta is 1/4tsp for 6 gallons
Sorbate is 1/2tsp PER gallon
I suggest you hydrate it 1st in warm water then add
Degas as well stir in the meta/sorbate
 
Add k-meta in every 3-4 months of aging time.

Sorbate is a one time addition - and really isn't required if you are not sweetening your wine.

You probably don't need the full dose of meta every time. Ideally, you'd want to check the pH and SO2, and add meta accordingly.
 
Very true - that was more of a guideline i suppose. You do want to measure and see how much SO2 already exists in the wine.
