My carboys are in an area which normally has a lot of natural light. I have been wrapping the carboys with black towels so the do not get hit with light. Is this recommended so the fermentation happens in the dark, or does it not matter?

You really don't want UV light to affect the wine. So yes covering it is a Good idea. I understand unnutral light such a floresent does not affect the wine, however IMO keeping it of all light is benificle. Others my chime in here with other opinions.
