Hello all,

Making a WE White Zin kit, fermentation appears to have stopped at 1.000, instructions state it should go to .996 or less. Is this a problem or should I not worry about it and move ahead.

Heres the details.

4-19 Started SG 1.074
4-24 Moved to secondary SG 1.010 and put into basement temp maintained around 67 - 68, never dropped below 65
5-5 Checked SG 1.000 moved back upstairs to 68 - 71 temp range to finish
5-9 Checked SG 1.000, small bubbles are still noticeable and the 3 pc airlock bubbles about every 20 or so seconds.

Thoughts?

Thanks all,

Brewster

Which kit is this? Either 1 will be fine but if its supposed to be a big red then it will feel a tad sweet as opposed to very dry. If its a lighter Zin then its extremely normal. Those small bubbles could be suspending the hydrometer a little also, try degassing your wine and take another reading!

Thanks for quick reply Wade.

It's the Vintners Reserve White Zinfandel. My wife doesn't like real dry wine anyhow. I've been taking readings in a Fermtech wine thief, not straight from the carboy, but I'll try degassing and take another reading anyhow to see if that makes a difference. According to the description it should be medium-dry.

The White Zin usually stops around there, Why I dont know but typically works in everyone's advantage as it really should not be extremely dry. Im glad you said it was that and not a Big red as that would not be great at that SG as those should really be as dry as possible IMO.Did it also come with an F-Pac, if so add to your taste and not just dump the whole thing in as it might be too sweet for you.

Wade he did say it was the WE White Zin from the beginning. You must have just still been a bit sleepy then.

Brewster it will be fine at that SG. Mine usually finished about there for that kit the few times I made it. Everybody likes it a tad off-dry.

Ooops, missed that! I have a tendency to read faster then my mind can comprehend but I do know what Im doing!

Thanks again guys,

Since it's my first try at making wine I thought I'd check in here first :) We are going to degas and move ahead with stabilizing and clearing tonight after we put our little one down for the night.

We degassed, checked sg, was still 1.000, and moved forward with adding the rest of the items. sg was 1.004 after adding the f-pack.

I've noticed that the floating insert in the 3 pc airlock has pushed up to the cap, and you can see the level is not even. i'm guessing some type of gas is still coming out. Should i try to degas again, or give it some time and see how clear it is in 2 weeks? I don't see any bubbles in the carboy like before we started, so it must be very slow.

If you used a drill mounted degasser then all should be good but either way if you added the fining agent leave it alone and see how it progresses.

This is probably caused by CO2 slowly coming out of solution. Natural degassing!

Well we got around to bottling tonight, just wrapped up, still need to clean up though...

wine is a tad sweeter than we are used to now and a little rough around the edges. hope it mellows over the next month or two, nice and clear though. I'm happy for a first try. I just got the WE Riesling to try next.

Until next time :) happy drinking
