So I just started the Selection Estate Washington Columbia Valley Riesling on Wed. My first reading was 1.080 today it's .996.

The kit says to transfer to the carboy and wait for it to get to .996, about 10 days. Since it's already ,there do I skip those 10 days altogether or let it sit at .996 for awhile?

Those are guidelines under normal fermentation rates. Check the SG for 2 days in a row and if it has not changed you can move on to the next step a few days early.

Although I haven't made this kit, I would expect it to drop to about .992.
