Hi,
I mixed a batch of dragon blood evening of 4/29. 6 campden tabs and a 40 oz bottle real lemon.

pitched ec-1118 morning of 4/30.

morning of 5/2 had no activity so I pitched ec-1118 again and 5/3 I have started fermentation.

was the campden and real lemon enough to protect the must from nasties given the delay in fermentation?

I haven’t made any wine in a while until the last few weeks. Looked at my old notes and I used them before. Rereading the recipe I see it doesn’t call for them. That makes me feel better about the delay anyway.
