I was wondering if it would be a good idea to put oak chips in elderberry wine to give it a different flavor. Has anyone ever tried that? It seems like that would be good with the oak in it.
 
Elderberry is one of my favourites, and I make a lot
of it each year.

But I never oak it. I think elderberry has flavor enough
and does not need oaking.

But it may add something to YOUR liking.

If you have made elderberry before I presume you know the taste
You could make an oak extract and add some drops to a glass
then you will know immediately wether you like oaking or not.

Look at my web-log in the archive (on the right side of the log) in the november section. There you find an entry on how to make oak extract.

When added it to the wine and you decide it tastes fine you
can oak the whole batch with cubes or chips.
