I'm making a fruit wine, after transfering to secondary, what comes next;

Degas
Add K-Meta
Add Sorbate
Add F-Pac
Add Clearing Agent
Rack
Rack
Back Sweeten
Bottle

How often do I add K-Meta, everytime I rack, everyother time?

After I get the order right, are some of these done at the same time and how long do I wait in-between for the others?

This is what i do - i think i have it all my steps included :h

Rack
Add K-Meta
Add Sorbate
degass
wait a few days
Add F-Pac
Back Sweeten
Add Clearing Agent
wait a week or 2
Rack
bulk age 6 months
filter
Bottle

In secondary, the fruit wine is still fermenting, so you should seal the fermentor, add an air lock, and test periodically to determine when fermentation is completely finished. You don't add kmeta until AFTER all fermentation is completed.
 
O.k, I moved the clearing agent down to after sweetening. Am I understanding correctly that the items I grouped together can be done at the same time?

Degas
Add K-Meta
Add Sorbate
Wait a few days, then;

Add F-Pac, wait 24-hrs, then;

Back Sweeten
Add Clearing Agent
Wait 3-4 week, then;

Rack ever 3-4 weeks until clear
Bulk age 6 mos, then
Filter and Bottle

I think you can add these at the same time:

Add F-Pac
Back Sweeten
Add Clearing Agent

Not sure you need to rack as often as 3-4 weeks.

After racking from the clearing agent - i would rack every 3-4 months of bulk aging and being that you can bottle in 6 months - i would just wait until bottling time - unless you have more that an inch of sediment.

I understand depending on the fruit, may mean more/less racking, aging and every batch is different... yet its helpful to be aware of all the 'steps' available to make a better wine!

I've learned so many new terms and processes from this website - Muchas Gracias!!
