I'm concidering extracting damson juice by using a steam juice extractor, I'm a bit concerned the rich red colour/color! from the skins may not come through. Am I concerned about nothing? :rn Cheers, Tony.

Kinda,
SAVE the "pulp" put that in a straining bag and use in the primary.

Freeze it (pulp) if not making it right away.

Follow on question.

I apologise if you think I'm banging on about these steam extraction things but they aren't used much this side of the pond and advice is a bit thin on the ground.

It seems that it is the correct procedure to allow the juice to build up in the collector and pour this first release over the fruit to heat up the fruit and get the process going. Do I then just allow the juice to drip into the collecting vessel, or raise the discharge tube and allow the juice to collect in the center section of the steam extractor untill the process has finished? I apologise once more chaps and chappesses. Cheers, Tony.
