I made a 3 gallon batch of candy cane from melted candy canes. I then blended with 3 gallons of Thompson Seedless. Backsweetened to 1.020. The wine has a nice peppermint nose and up front peppermint taste, but my wife says it has a celery aftertaste.

What could be causing this celery taste???

Add a pinch of tannin to some and see how it is then

no sorbate added

Julie, I blended the candy cane into some Thompson Seedless for this batch at a 1:1. I shouldn't need to add tannins, should I?

Celery/vegetable taste is normally a sign of low tannins, Thompson seedless grapes do not have a lot of tannins, if you did not add addition tannins then that is what I think your problem is.
