I am looking for advice for what fruit or juice to add to carignan grapes. I think I read that they are a bit high in acidity and that this grape is used in varietal wine.
 
Hi lefleurs. AFAIK Carignan is most often used as a blending component with grapes that have 'fuller' fruit characteristics ... e.g. Tempranillo (in Rioja) and Grenache / Syrah (southern Rhone blends). I have a feeling that Merlot might work OK as a blending partner as well?
 
it blends very well with syrah and grenache in its home in the south of france but Ridge in California also makes some great zinfandel blends with carignane in them.

its historicaly part of old vin feild blends of zinfandel , carignane and petite sirah

I'd vote for blending with Zin as it will bring the color and tannin zin lacks.
