My first wine kit, a chianti, is coming up to the date that the mgfr
suggests bottling. I also have a second wine running about 10-15 days
behind that one (Old Vine Zin)
I've heard and read all kinds of stuff about bulk aging.. and wondered
what the board thought.. should I bulk age them.
A few questions...
1. If I bulk age it should I rack it off of the ick in the bottom left after
clearing?
2. What will bulk aging change... flavor? If so, how is it different than
bottle aging?
3. I've read that if I bulk age I should rack it every 2-3 months... is that
true?
4. Is is possible to bottle say.... half of the batch, and put the rest into a
2 gallon carboy for bulk aging... is that better or worse for the wine?
Thanks!
