Hello, I searched this topic and I am finding different answers.
I am doing bulk aging of Amarone red vine - my first batch that I bulk age. I have 6 gallons, that now is in carboy. I want to rack to another carboy and wait for another 3 months (so 6 in total). I understand I need to add "Potassium Metabisulphite" - how much should add?
I see some people say - they add usually 1/8 of the tbl. spoon. Other add 1/4 of the tbl. spoon. On my "Potassium Metabisulphite" pack it says: "use 3 grams or 1/2 tsp per 23 liter to give 50ppm".
So should I add 1/2 tsp? Should I add less? How critical this amount is - will there be a difference between 1/8 and 1/2 tsp?

As I know, 1/4 of tea spoon each 3 month or so.
People who knows more than me will confirm.:h

Thank you - I was waiting for the answer - I am going to do this right now.

If you add the Kmeta pack come with your kit and not passing the first 3 month, you can probably wait a bit, but don't think it will hurt to add more at the moment.
