I've always bottled after racking a few times and cleared. This year I want to bulk age my concord wine. I usually add
Black currant to my wine just for a little more flavor. Do I age with the black currant concentrate or without, and how ofter should I rack. Thanks.....
 
I would age with the concentrate, in case it drops sediment.

How often to rack? As seldom as possible.

I rack/press around the end of fermentation, SG 1.000 or less. Rest the wine for 1 to 3 weeks until the sediment starts to compact. After that? It depends on the sediment. If I have only fine lees, I don't rack until near bottling.
