I encourage you to look at the calculator @Northerngal posted. One of the WinemakerMagazine notes is you are better off adding a bigger dose once than three equal doses , a guess is that if we looked at free SO2 we would see it react fairly quickly after addition example 48 hours and then maintain a relatively flat level till the next time the wine is exposed to air. Since some folks are good sulphite tasters I would not overdo at bottling but aim for exact calculated target.
Hi , How much potassium metabisulfite do you add every 3 months ?
I do not add based on a three month rule but try to minimize number of times a carboy is opened.
