Blueberries will be harvested soon. Anyone have a real good recipe they would like to share?
 
Here is a Mead recipe if your interested, Ive made this and it is
awesome. It is actually Waldo's recipe that I upped the fruit amount
and a few other ingredients as I like a really full flavor. I
substitued some fresh blueberries for froxen only becuse Blueberry
season was done and I didnt have enough.



15 lbs. of honey




9 lbs. frozen Wymans wild blueberries




3 lbs fresh blueberries frozen




3/8 tsp liquid pectic enzyme


6 tsp acid blend




2 quarts Wymans blueberry</span> juice




4.5 gallons hot water to stir up the honey and breakdown the blueberries better.


6 tsp of yeast nutrient


3 tsp yeast energizer




6 crushed campden tabs since I still have some and will only use them in the beginning and to make sanitizer.


Starting SG of 1.100



Red Star Pasteur Red yeast.
 
That recipe sounds great! I assume it makes 6 gallons. Berries are no problem. Do you think adding more berries and no juice would possibly add more to it?
 
That will be fine just remember that sugar levels and amount of acd
vary so start lower on the amount and adjust up to desired level. To
high on any of these #'s can throw off the balance of fruit wines and
either be to high of alc. or very tart. Good luck, have you ever made a
Mead before?
 
Mead is its own entity as the honey gives it a much different badded
body. A little more work and money but definetley worth it!

We made a nice blueberry wine a few years ago.....Blueberries are touchy around here...we need snow cover to guarantee a crop.


This is the recipe I used...it made a nice red wine.


16#frozen blueberries....[steam extracted]
2 500 mil bottles Red Grape Concentrate
8 pounds sugar
5 tsp acid blend
3 tsp tannin
5campden tablets
Water to 5 gallons and S.G. to 1.085 or desired alcohol


Next day add:
4 tsp pectic enzyme
5 tsp yeast nutrient
3 tsp yeast energizer
Lalvin 71b-1122 Narbonne yeast


I strongly suggest using both yeast nutrient and energizer as blueberries can be tough to get started.
 
Thanks NW. Blueberries are fairly plentiful here. I have a couple of friends that can get all I could ever want. It sounds like a good wine from reading other posts.

Would have used 20# [or more] of fruit if I would have had them.
