Just start my blackberry Port, here the recipe:
for 11.5 Liter
- 32 # Blackberries
- 4 # Raspberries
- 4 Bananas
- 2 ½ Campden Tablet
- 1 ½ tps Pectic Enzyme
- 3 tps Yeast Nutrient
- Adjust Acidto .70
- Yeast K1-V1116
No water add, will bring the ABV to 18 % if possibleand will fortify with brandy to 19 %. For sweetness my goal is between 1.018 to 1.020.
I still had 33 # left of blackberry so I just made a 5 gallon blackberry wine
