I hope this applies to the use of KC clarifier.
We are just finishing a novelty coffee wine((adult beverage
)) or whatever it is.
Boy what a pain. Stopped fermenting first time--added nutrient and energizer with 1118-2 weeks later is sg is down a but but not even close to dry.
As i re read my notes, i see that the original recipe called for 1 tbsp instant per gallon. I decided that 2 would be better and according to my notes i put 3 in by mistake.
I don't know whats in the instant powder but ill bet thats what caused the fermenting problem.
I stabilized with sulfite's and sorbate 2 days back and am clarifying now.
Again i will wait 2 instead of three days for the KC to work because there is a lot of yuck in the carboy bottom.
I will take a breather from the wine for about 2 weeks and take a solemn vow to double check everything and not get too creative with proven recipes.
This is not the first batch that i artistically messed up.Edited by: scotty
