WineXpert Australian Grenache/Shiraz/Mourvdre (Selection International

I received this kit for christmas and was wondering how I might tweak this kit by....
what yeast might I try( it came with ec118)
what might I add to the primary or secondary as in raisins,etc
It came with four bags of oak.

what tweaks would you consider?

About the only tweak I would consider, at least to start, would be a cup or 2 of zante currents in the primary. Is all the oak in chip/powder form? If so, the tannins should be pretty good to start. I would start with the currants and then see how it tastes in 3 months or so. You have time on your side.

I have that kit on deck. My plan was to use RC212.
