I am returning to home brewing after a 10-year absence and also want to try out home winemaking on a small scale - 1 to 2 gallon batches.
Most of the wine kits and concentrates seem designed for much larger batches - 3 to 6 gallons.
One option may be to use a canned concentrate (e.g. Alexander's Sun Country) but I would still be probably using only half a can at a time.
Can I freeze what I don't use for a period of, say, 2 to 4 months, without significant ill effects (to the concentrate)?
