Hi,

Any recommendations / old threads on how to ferment Aglianico grapes?

I did a quick Google search and Wikipedia states that the grape can have high tannins and acidity. long bulk aging may be required. the fermentation should be similar to any other red wine. I would adjust acid at prefermentation. if final wine is to bitter from high tannins blend with a low tannin wine or fine with gelatin to remove some of the tannins.
