when you add sugar during fermentation does it have to be dissolved or does it matter if it sit at the bottom of the demi john

What are you making that you need sugar?

It doesnt have to be but you will get false readings and may leave your wine with unfernented sugar on the bottom. Wont really hurt anything but is a waste and will confuse you and like I said will give you false sg readings.

Even simple syrup needs to be well stirred in, as sugar weighs heavier than water and alcohol, so it will naturally sink to the bottom.
