My acid is too low in must. Stores are closed today so I cant pick up any citric acid, but I will be ready to pitch yeast tonight. Would it be ok if I added acid to must after adding the yeast or will that just screw things up?

yeah you can - although proper acid levels help with fermentation.

I take acid readings a few different times - adjusting as and when needed.

What about adding during fermentation? Would it be safe to stir it up? The SG is getting down to 1.014

Cool. I would say it is going good. Still bubbling good. It is slowing down a little but it is getting close (1.014 as of friday). I have bought some acid blend waiting.

Yup - just wait until it is done fermenting.

Rack - adjust acidity, add k-meta and sorbate in (if backsweetening).
