I am a first time winemaker and I have a question. I am making strawberry wine.My primary was great. I'm in my 3rd day of secondary fermentation and have no bubbling in the airlock. My sg is 1.000. Have I done something wrong?? BTW...temp is 68-70*
Here is the recipe that I used....for a one gallon batch

<LI>1 tsp. Yeast Nutrient
<LI>1 Campden Tablet
<LI>1 pack Cote's de Blanc Yeast or Champagne yeast. Otherwise regular wine yeast. </LI>[/list]



Wash and remove the stems and leaves. Use a straining bag and fill with the strawberries. Tie the top, commence crushing and mashing. Leave straining bag in a sterilized bucket. Add water, sugar, acid blend (if needed, do test), tannin, peptic, enzyme, and yeast nutrient. Stir well. Before you add the yeast, you will need to sterilize the must. Crush up one campden tablet and add to the must. Stir and cover for 24 hours. Now you may add the yeast. Stir well, cover, and stir every day for 4-5 days. Then siphon into your 1 gallon jug, put rubber stopper on and airlock. Siphon every 2 weeks and add 1 crushed campden tablet every time you rack. It will take about 2-3 months before your wine is clear enough to bottle. You can make more than just 1 gallon if you just multiply out the recipe to however many gallons you want to make. One pack of yeast will work well for 5-7 gallons.

About your Strawberry. I make Strawberry wine each year for over 6 years. Since you racked off the primary and the gravity is 1.000 you are almost dry. It may go down to .994. After 2 weeks you might want to fine and start clearing your wine. I find if I clear after fining in the secondayr it works well for Strawberry wine. You will see the wine clear from the top down. Kinda cool to watch. I age it for 6 months and rack again every 2 months.
You may also want to backsweeten the wine. If so catch us when you are ready.

Thank you for the advice. I have been reading a few forums but this one seems to have a lot of people with a lot of knowledge.

So, it's ok that it's not bubbling in the secondary?
And if so, just wait for the 2 weeks as instructed and rack again.
Very sorry for the amateur questions! Just really want this to come out the way it's supposed to!

Welcome Monkeyjuice, what was your starting sg? That is a decent sg and it may go lower depending on what sg you started at as each yeast has its own threshold to abv and even then it will vary upon how healthy the yeast colont was so just keep an eye on the sg for the next few days to determine if it truly us stable and done or just finishing very slowly. If you haqe the same sg a few days in a row then continue on with the next step.
 
Yep, most of the fermentation is done. You will see a bubble now and then from now on.
 
well Wade, I made a rookie mistake and didnt take a reading when I started. I think that's why I was getting worried. You can bet that I will from here on out!

If you followed the directions exactly I don't think the sugar content was too high. 2 lbs of sugar is only 4 cups and 4 cups of sugar will raise the S.G. of a gallon of must by .040. I would think that the must without the sugar would likely be in the 1.050ish range and probably no higher than 1.060. I usually land around 1.050 when doing strawberry wines and I use 4lbs/gallon. This would put you in the 1.090 -1.100 range most likely.


Did you use the Cote's de Blanc or Champagne yeast as suggested in the recipe? If so it should ferment all the way as those can handle up to 18%abv and sometimes even a little more.


Check the sg again for the next 3 days. You mentioned it is only in it's 3rd day in the secondary and it will typically take most musts 5 - 7 days at the temp you have to finish fermenting.


Also, it seems to me that most people here on this forum, including myself, do not use campden tablets. We use either Potassium Metabisulphite or Sodium Metabisulphite. The recommended dosage is 1/4tsp for 5 gallons. If you're only doing a gallon I'd dissolve 1/8 tsp in some water and then dump half of that in. You should be good to go for about 3 months.


I also agree with tepe that you should use a fining agent. Super Kleer is what I personally recommend but there are others that work pretty well too. Bentonite added prior to fermentation also helps speed up the clearing process but I usually don't do this myself. One of the things I love about making wine is that there is no one way to do any of the steps. You always have options. Just keep in mind that each optionmay have a different effect on the finished product. Experiment.


Your recipe also does not mention degassing. This is a crucial step if you want your wine to clear properly. No amount of fining agent can help you if you don't do this.


If you don't do an acid titration test then I would suggest adding only 3/4tsp of acid blend, especially if you are using over 4 lbs of strawberries. Some acid is needed during fermentation and batches can be ruined if there isn't enough in there, but on the flip side too much acid can render a wine undrinkable in the end and is very hard to fix. Once the wine is finished fermenting taste it and if it needs more add the other 1/4 tsp.


Keep asking questions. There's a ton of people here who know a heck of a lot more than I do about this stuff. Wade, Appleman, Northern Winos, tepe, Peter Z (aka "our resident chemist"), gaudet, joeswine, waldo, hannabarn, scotty, termini and about 100 more are just teeming with knowledge on every subject related to winemaking. There's an expert here on every subject from planting a vinyard to steam juicing to making labels. Someone will always have the answer. Remember, the only stupid question is the one you didn't ask.

Thanks whino for all of that advice. I just went to my local Ace Hardware store and low and behold they have a winemaker section! I found what I needed for degassing and they also had Super Kleer and potassium metabisulphite (which I'll use in my next batch). The only thing they didn't have was one gallon jugs....they have 3 and 5 gallon....guess its a sign to go bigger!!

Welcome again Monkeyjuice. Please note that it is One(1) pound or 2+ cups of sugar that raises SG by .040. Therefore 4 pounds would give water a SG of about 1.080. Each pound of strawberries supplies .065 pounds of sugar so 4 pounds is about a quarter pound of sugar - or .010. Add the two together and you get 1.090. That will be a great spot to be, so you should be all set with the finished alcohol level (maybe just a tiny bit high for strawberry).

Good catch on noting my mathematical error. 1 cup of sugar does = .020. I was going off the top of my head and did not consult my notes. I usually don't rely on thisfor adjusting sugar. I've always found it a good practice to just add 1/2 the sugar called for, check with the hydrometer and adjust in increments until you get the reading you want.

Yeah....Ace Hardware of all places! I couldnt believe they had almost everything I needed.
Everyone has been a tremendous help. I guess I just got the rookie jitters. My wine looks, smells, and tastes incredible. Can't wait until it's finished.
