Hello Everyone,

I had a question about cider. I made a 3 gallon batch of cider one night, well about 3 in the morning. It has now has now been in a secondary for a couple of days. I forgot to add pectic enzyme to it. I was wondering if it will clear or can I add the enzyme now? The only other thing I forgot to mention is I used Extra light DME as a fermentable.

3 gallon Apple Juice
2 ponds Extra Light DME
Nottingham Ale yeast

Primary for 12 days
Secondary for 2 days so far

you should be able to add it once fermentation stops and you stabilize.. will take a few weeks but you should be fine.. I did same thing once..
 
Thanks, but I was planning on bottle carbing it. Will the enzyme take too much of the yeast out of suspension for it to work? If it will I'll just leave it cloudy, and hopefully it won't effect the taste much.
