How much juice could I get from 30 plants. This is my first year so in a few years I should be getting grapes. I want to at some point get 200-400 gal of juice how many plants do I need for that thanks. And how dose my trellis look any advice would be nice

depending on varity, weather, and other conditions, anywhere between 1/2 gal and 1 1/2 gal per plant. For easy math go with 1 gal per plant by the 4th or 5th year.
Picked some Norton last year ( first of the drought years) took 22 plants to get enough for 100lbs. In most years 100# will give about 5 to 7 gallons. Two years ago it only 6 plants to get 100 lbs at a different vineyard.

On the Niagara which is better for them. Keep short and cane prune or to let them get tall and curtain them.
 
I find Niagara does well as a top wire trained system and let the shoots hang down. It opens up the canopy better and the fruit ripens more evenly.
