    I screwed up

Yesterday morning I started a batch of DB. Last night, I realized that I washed and sanitized all of my equipment, except for the primary. I washed it but forgot to sanitize it. Did I ruin the batch? Should I chuck it or just continue on and hope that I didn't have any nasties in the primary?

Cellar Craft CC Showcase Amarone question

Hello...I just started my Amarone this morning and had a question. Per the instructions, I added the grape pack (what a pain getting out of the bladder) and started everything going. My question is, if you're adding the fruit in the primary, why wait to secondary to add the enzyme? I'm...

    Cellar Craft Big enough primary?

I'm home for a "snow day" and decided that I would start my CC Showcase Amarone. I opened the box and looked at the instructions and it states that I should have an 8 gallon primary. The primary that I've been using is only a 6.5 gallon. Do I have to go buy another primary?

    Leaky cork

I went to grab a bottle of DB that I bottled last weekend and noticed some leakage on the cork. Is this ok? What causes this? After corking, I left the bottles standing upright for 24 hours and then laid them on their sides.

    Why Bulk aging is better?

I know that bulk aging is supposedly better but can someone tell me why? Why is it better to have it age in a carboy rather than in a bottle? May be a silly question but I was curious.

RJ Spagnols Bulk aging a Winery Super Tuscan

I'm a newbie (figured I would put that out there right away) with one kit under my belt. My second kit, which is now in primary, is the Super Tuscan. The instructions say to bottle after day 42 but after reading a bunch on this forum it seems that bulk aging is the way to go. Excuse me if...

    Mosti Mondiale Young wine tastes

Hello...I'm a first timer and just bottled my 'Mosti Mondiale Vinifera Barolo that I started on 8/17. Probably a week past when the instructions said I should. I tasted it and know that time will make it better but having never tasted young wine before, I'm not sure how much it will change. I...

    Is it clear?

Hi! I'm making a Mosti Mondiale kit (my first) and the instructions say after adding the clearing agents to wait 7-10 days before bottling but to not bottle if not clear. How can I tell if it's clear? It's a dark red and when I put a flashlight to it I can't see through. Should I rack to...

Mosti Mondiale Follow directions or add k-meta?

Hello...me again with another "first time I'm making wine" question. I'm making a Mosti Mondiale kit and it's currently clearing. The instructions say to leave it sit for 7-10 days while it clears (although it's so dark red I'm not sure how to tell if it is actually clear without transferring...

I'm sure I'll get the hang of it but...

this is my first attempt at making wine. I seemed to do ok getting the primary fermentation going despite being obsessed about cleanliness and sanitization. Then came time for the first racking into the carboy. At first, things seemed to go ok although I couldn't get the bung to stay in the...

My attempt at a wooden rack...

Took me a lot longer than I had anticipated but I like the way it came out. I just have to add some support beams to the back (and no, that's not where it's going to stay...i'll move it from the heating vent)

    Mosti Mondiale Fermenting question

This is my first attempt at making wine so this may be a really noobie question but, I started on Saturday afternoon (it's now Monday morning) and there is a layer of foam on the top of the must, but It doesn't appear as though the air lock has moved at all. Is that ok? I guess I expected a...

Mosti Mondiale Stirring in the yeast?

Hello, I'm new to the forum and to wine making. I have a MM Vinifera Barolo that I am going to start and when reading the instructions, it says to pour the bentonite into a measuring cup and let it sit. Then it instructs me to add the juice and water and then pitch the yeast. After adding the...
