Having issues on my whites. All of them.

Couple years in the making. All has been with Luva Bella juice. Several batches of moscato, reisling, Chardonnay, Sauvignon blanc, and vigonier. I do not think this is an issue with the juice supplier with it being multiple batches/years. I my first thoughts are starsan is throwing off the...

    Hate to admit this!

It looks like I need to cut back. After starting into this hobby in 2011 I have been eagerly awaiting every possible juice harvest time. This one came too soon and I won't be able to get anything new. Work, life, other hobbies, getting rid of a crazy ex (whew!!!), weddings with friends and...

    Over Oaked

Got a little carried away with oak chips on a merlot and Cabernet. It will go away in the carboy right? What about in the bottle? Is it slower in the bottle?

    Sanitizing oak

Was picking up a couple bags of oak chips yesterday and was told I should freeze them for 24 hours to kill off any bacteria. I've never worried about it and just put chips right in. Is there a need to kill off anything? And I don't think freezing would even do anything?

    Good corks?

So I keep reading on different cork types and the general consensus is if they are good natural corks they will last for years if in a good environment and kept wet from the wine. When people say "good corks" how do they determine it before having a bad batch? I'm using ld carlson 9 x 1 3/4...

    Cold crashing logistics

So I had a white wine that wasn't clearing and put it in an old fridge to help it along. My problem is racking it off without disturbing anything. The carboy is too low for a gravity siphon to work and too high for the siphon to fit in it. Anyone have a solution? Sent from my iPhone using...

Anyone ever to surprise yourself in the future?

I need to drink less during my bottling days. For some reason My drunk self has always found this kind of stuff funny. I think it's either moscato or Chardonnay. Sent from my iPhone using Wine Making

    Quick wines

Had a post in recipes and didn't get much. I gave a bunch of wine to my customers in November abs December and business took off. I'd like to do it again soon, does anyone have anything that's fast to make and rather sweet? I haven given them skeeter pee and need to bottle some dragon blood...

    So looking at future houses.

Current isn't far from being ready to sell, I'd like to have an idea on what to look for/need for a wine area in the next house. As much as I wish it would be something magazine worthy, I don't like payments so will stick with something reasonable and a small payment. I looked at one last week...

    Ohio juice

I know there's a lot of ohio people on here, just want to post up a recent experience. My normal juice place didn't have any grapes this spring and I was calling around to different places. One if them was gentile juice in north royalton. After talking to Vince for a bit last Monday I decided...

    How soon can you bottle?

From juice buckets, fermentation has been done for a while, wines still have a "yeasty" smell. If I get them de gassed, will the yeast smell go away if I bottle? I bulk aged my last batch for over a year, I'm ordering more juice next month and these will be at 6 months. Trying to get buy...

    Fast wines

So I gave away about 12 cases of wine to some of my best customers over the holidays and am pretty depleted! I have picked up a ton of business from doing it, and want to keep it going. I am looking for recipes that are tasty but also drinkable in a month or so. Skeeter pee is one, I will be...
