    low acidity

    If after fermentation the acid is still low can you add Acid Blend then or would I need too?? I am still not exactly sure of the purpose of the acid in wine as I am still learning???? No snickering pleasestill consider myself a newbie. Lynn

    Ihope you all don't mind me posting this in two places to getQuicker hit. I have a batch of Merlot (VR kit) ready to bottle. I used a fast flow bottle filler and Several of the bottles foamed up at the top. I thought it would settle out but so far it has not. Will it hurt to go ahead and cork it??

    I have a Blackberry that I want to cold stabilize and I was wondering at what point Wine will freeze? I assumer that the more alchohol it has in it the colder temp it will take to freeze it. This isa Blackberry that is around 13.5% alchohol. Thanks for any info.
