I haven't been able to get in for about a month. I see they no longer say they are in the process of replacing their server on winepress.us web page.

I've made several of the Island Mist kits. They never clear as quick as the instructions say but will clear on their own if you wait about 3 - 4 weeks after stablizing. If you try to degass will sediment is present, it will take another 2 or 3 weeks to clear again. I would recommend waiting...
It's been my experence when I add sorbate before fermation stops, it will continue for a few more days. From what I've learned, sobate doesn't kill the active yeast but stops it from reproducing. So yours will stop now on its own without additional sorbate.
