I have 7 gal of cider that I pressed. All yeast packets seem to say up to 5 gal. I have put in a packet of Red Star Pasteur Champagne. Think one is enough? I have a packet of Lalvin K1 V116 in my fridge but rumor has it that stuff may kill the other and leave a yeasty taste.
 
I would not be worried about it leaving a bad taste.However, it is likely one strain would dominate the other. Honestly, I think that your one packet of yeast that you tossed in their should be more than up to the job.
 
It all depends on your specific gravity. If a high sugar environment, the yeast may stress until reaching the appropriate amount of cells to start a fermentation. Normally rule of thumb is 1 gram of yeast per gallon of juice. Yeast nutrient is also a requirement. Stressed yeast cause off odors. Keep your juice stirred. Oxygen will help yeast.
