Do I just sprinkle the yeast energizer into the wine, or do I need to mix it with water or wine first??

Both my Jalapeno and Blueberry are stuck on 1.04.
 
I just sprinkle it and stir, but dont add all at once, doing in thirds..
1/3 starting, then some in the middle, and then some at the end.
makes a better ferment that way.
 
How much would I put in at a time per gallon? Would I need more for the jalapeno than the blueberry?
 
There is a difference between energizer and nutrient, you need both
 
I was adding mine in at the start, but Turok started me doing it in thirds which made better sense, and I think i get a better ferment becuase of it.
And as robie said...you need both...nutrient plus energizer.
 
Nutrient can be added all up front or half and half.

Energizer is added @1.000 to give yeast an extra boost.

Nutrient-1 teaspoon per gallon.
Energizer-1 teaspoon for a 6 gallon batch.

Must needs oxygen so be sure to stir a couple times per day.

It isn't an absolute necessity but will greatly help your yeasts finish off the last remaining sugars. All of my musts ferment below .990 for a completely dry wine. Following clearing and aging I back sweeten, wait a few weeks and bottle. Never a refermentation (I do use sorbate).

During fermentation it is important to stir your must to release CO2 and move around the yeasts so that it is easier for all the sugars to be consumed. Stirring also introduces some O2 which yeast need which in turn helps to expedite fermentation.
