am looking for some finishing flavours for an unintended Port, maybe some kind of oak that suits my syrupy sweet cherry wine with vanilla perhaps ?

This is a very relaxed forum, welcoming to beginners and newcomers. Yeah, we're unlike the rest of the internet.

A year ago I constructed a Port, and while I didn't flavor it, the notes may be useful to you.

Wade, that sounds like what happened with my mango wine last year. can you suggest any good sources of recipes that are more 'modern'?

Well you don’t follow a recipe when it comes to adding sugar. You check your SG first and then add sugar to get to your target

and now you tell me it’s a 13 year old thread…
