The "don't top up" instruction in stage 3 first appeared in WE LE Nebbiolo with rapeskins last year. In new WE Eclipse kits, the "don't top up" instruction appears in stage 4, racking and clarification. If you go all the way to stage 5, bottling (stupid place to put it) there is a "top up or rack down" instruction in the case you want to bulk age. I have found that with much more diligence in racking that I hardly top up at all, But with this LE Shiraz/ Cab kit, the yeast did not flocculate properly, so I could not get as much of the liquid as I would have liked, and this one will need topping up at stage 4. I will use a WE Aus Cab/Shiraz.
