That's what I'm trying to do now. LOL

I have the following wines going:

Watermelon (5 gallon bucket)
Japanese Plum (5 gallon bucket)
Peach (5 gallon bucket)
Fig (2 gallon batch)
Will start Green and Red Grapes (separately) tonight, so that will make a total of 6 batches going. Will probably do (1) 5 gallon batch and (2) 1 gallon batches.

With that much stock of all of those, I should be able to let a couple bottles age for a year huh? LOL :)
 
Backsweeten to 1.010 and like said before take some wine from the carboy and use that to add sugar to for backsweetening and you could also backsweeten with some strawberry juice and have a strawberry/watermelon wine. Also have the acid up to .70%.

And like said before, you need a year of aging before drinking.
