Was it wrong to stabilize and back sweeten my vintners black currant wine at the same time?? Also this kit was started on November 14th maybe I should of just stabilized and back sweetened later?? I plan to add the clearing agent. Is this ok to do now? Plan to leave in carboy to age for awhile
 
I prefer to stabilize and give it a few days in between sweetening but wine kits have you do this all at once so you should be fine. You can lear it now so all is good. I just always like to make sure the sorbate has done its thing first before adding anything the yeast can start working on.
 
My normal method is to have the wine completely clear before final stabilization and sweetening. So I do fining agents before sugar.
