So this is my second Winexpert kit, and the instructions always say to not stir the yeast, yet every other kit ive done has instructed to stir multiple times.

Do i listen to them? judging by the searching it appears that you should always stir for the first few days. is that right?
 
WineExpert, Spagnols and Vineco instruct you to just sprinkle the yeast on top without stirring. Once the yeast is settled in there is no problem stirring; many people stir daily to introduce oxygen. I don't believe this is necessary, unless there are grapeskins or oak, etc to stir in, but it's a personal choice.
Other kit makers may have different instructions; I'm not familiar with them.
 
Best bet is to follow the instructions. Just in case something goes wrong at least you have done what you were told.
