I am looking a making another mid level kit in either of these two styles, any recommendations?
 
Id look into the Mosti Vinifera Noble or Renaissance depending on how much you want to spend. the Renaissance as the raisins which will add more body and tannin and probably a little more abv to help it shelve even longer but the VN will be ready a little earlier.

I don't know what you call a mid-level kit but the Mosti All Juice Chianti we bottled last month has real promise. Won't likely be ready until November but at bottling seemed pretty well balanced, a little light on oak, but almost absent KT, the thing that puts us off on our reds.


I am already planning to do another one.
 
Yes, they are only a little more then the Renaissance kits but will take longer to come around. They are all good but the bigger the product, the longer it will take to be very good!
